Nella cottura, una salsa è liquida, crema o semilavorata servita o utilizzata nella preparazione di altri alimenti. Le salse non vengono normalmente consumate da soli; Aggiungono aromi, umidità e appello visivo ad un altro piatto. La salsa è una parola francese tratto dalla salsa latina, cioè salata.
